Vibrant Green Garden Mash Bowl with Herby Sautéed Veggies

Ingredients
- 2 cups frozen peas
- 1 tbsp olive oil
- 2 shallots, thinly sliced
- 2 garlic cloves, minced
- 1 cup broccoli florets, small
- 1 small zucchini, sliced into half-moons
- 1 cup mushrooms, sliced
- A few green beans, trimmed and cut in thirds (approximately 1/2 cup)
- 2 cups fresh spinach
- 2 tbsp fresh herbs (such as parsley, basil, dill or thyme), chopped
- Salt and black pepper, to taste
- Lemon zest and juice, to taste
- Optional: red pepper flakes or grated hard cheese
Instructions
- Make the pea mash: In a small pot, cook peas in boiling salted water for 3-4 minutes until tender. Drain, reserving 2 tbsp of the cooking water.
- Mash peas with a fork or potato masher, adding a splash of the reserved water, lemon juice, zest, a pinch of salt and pepper. Keep warm.
- Heat olive oil in a large skillet over medium heat. Add shallots and sauté for 2-3 minutes until soft and translucent.
- Add garlic and cook for 30 seconds until fragrant.
- Add mushrooms and cook for 4-5 minutes until browned and tender.
- Add broccoli, green beans and zucchini. Sauté for 6-8 minutes until vegetables are tender-crisp.
- Stir in spinach and cook until just wilted.
- Remove from heat and stir in fresh herbs. Season with salt, pepper, lemon juice and zest.
- To serve: Spread the mashed peas in bowls. Top with the sautéed vegetables. Drizzle with a little extra olive oil and a sprinkle of herbs or cheese if using.
