Vegetable Rolls with Peanut Sauce

Ingredients
- 4 large rice paper wrappers
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1 cup sliced bell pepper (mixed colors)
- 1 cup fresh spinach or lettuce
- 1 cup sliced avocado
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped roasted peanuts
Peanut Sauce
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce or tamari
- 1 tbsp honey or maple syrup
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1/2 tsp freshly grated ginger
- 1/4 cup warm water, to thin
Instructions
- Prepare the vegetables: Wash, peel where needed, and slice into thin strips.
- Fill a shallow bowl with warm water. Dip each rice paper wrapper into the water for 5-10 seconds until pliable, then lay flat on a clean surface.
- On each wrapper, place a spoonful of spinach or lettuce, followed by carrots, cucumber, bell pepper, avocado, mint, cilantro, and a sprinkle of peanuts.
- Fold the sides over the filling, then roll tightly from the bottom up, sealing the edge with a small dab of water.
- In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and warm water until smooth. Adjust thickness with more water if needed.
- Serve the rolls with the peanut sauce on the side for dipping, or drizzle atop for an extra punch.
