Vegan Broccoli Balls
Delicious, protein‑rich veggie bites perfect for snacks or party platters.
Ingredients
- 1 cup frozen broccoli florets, thawed
- 1 cup cooked chickpeas (or 1 can, drained and rinsed)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 3 Tbsp nutritional yeast
- 1 ½ Tbsp ground flaxseed meal + 3 Tbsp water (binder)
- 1 cup rolled oats (or gluten‑free oats)
- 1 Tbsp fresh lemon zest
- 1 Tbsp fresh herbs (parsley or dill), chopped
- ½ tsp salt
- ¼ tsp black pepper
- 1 Tbsp olive oil, for greasing the pan
Instructions
- Place the broccoli in a steamer basket or microwave for 3‑4 minutes until just tender. Drain and squeeze out excess moisture.
- In a food processor, combine broccoli, chickpeas, onion, garlic, nutritional yeast, and lemon zest. Pulse until the mixture is finely chopped but still has some texture.
- In a small bowl, whisk the flaxseed meal with water to form a slurry. Add this binder to the processor and pulse again.
- Add the oats, chopped herbs, salt, and pepper. Pulse until everything is incorporated and the mixture holds together. If it’s too dry, add a splash more water; if too wet, add a little more oats.
