Vegan and Gluten-Free Ginger Cake
Ingredients:
- 1 3/4 cups gluten‑free all‑purpose flour (golden or a blend)
- 1 cup organic cane sugar
- 1/2 cup unsweetened applesauce
- 1/3 cup neutral oil (coconut or sunflower) + 2 tbsp fresh lemon juice
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1 cup almond milk (or oat milk)
- 2 tsp vanilla extract
- 2 tsp gluten‑free baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9‑x‑5‑inch loaf pan or line with parchment.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, ginger, cinnamon, cloves, baking powder, baking soda and salt.
- In another bowl, combine the wet ingredients: applesauce, oil, lemon juice, almond milk and vanilla. Stir until smooth.
- Pour the wet mixture into the dry mixture and stir just until combined; the batter should be a little lumpy.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
