Spicy Peanut Salad
Crunchy, vibrant, and packed with protein, this salad combines fresh veggies with a bold peanut dressing for a satisfying meal.
Ingredients
- 2 cups shredded purple cabbage
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1/2 cup sliced red bell pepper
- 1/2 cup edamame beans (cooked)
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced green onions
- 1/4 cup crushed peanuts
Instructions
- In a large bowl, combine cabbage, carrots, cucumber, bell pepper, edamame, cilantro, and green onions.
- In a small bowl whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey, sriracha, minced garlic, and grated ginger. Add water a little at a time until the dressing reaches a creamy consistency.
- Pour the dressing over the salad and toss gently to coat all the vegetables.
- Fold in the crushed peanuts and give a final stir.
- Serve immediately, or chill for 15 minutes to let flavors meld.
