They're a fantastic way to enjoy vegetables in a fun, comforting format that supports a healthy lifestyle.
Ingredients:
- 1 small head green cabbage (about 4-5 cups finely shredded)
- 1 medium carrot, grated
- 1/2 red onion, finely minced
- 2 cloves garlic, minced
- 2 large eggs (or 2 flax eggs for a vegan option: 2 tbsp ground flaxseed + 6 tbsp water, let sit 5 min)
- 1/2 cup whole wheat flour (or oat flour for gluten-free)
- 1/4 cup vegetable broth or water
- 2 tablespoons low-sodium soy sauce or tamari
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon black pepper
- Pinch of red pepper flakes (optional, for a kick)
- 2 tablespoons chopped scallions, plus more for garnish
- 2-3 tablespoons olive oil or avocado oil for cooking
For the Dipping Sauce (Optional):
- 2 tablespoons low-sodium soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon grated fresh ginger
- Pinch of red pepper flakes or a dash of sriracha (optional)
Instructions:
- Prepare the Vegetables: Finely shred the cabbage (a food processor with a shredding disc works great here). In a large mixing bowl, combine the shredded cabbage, grated carrot, finely minced red onion, minced garlic, and chopped scallions.
- Whisk the Batter: In a separate medium bowl, whisk together the eggs (or flax eggs), whole wheat flour, vegetable broth (or water), low-sodium soy sauce, toasted sesame oil, black pepper, and red pepper flakes
