Roasted Sweet Potato Boats with Spiced Chickpea, Spinach & Herbed Yogurt

Ingredients
- 2–4 medium sweet potatoes
- 1 cup canned chickpeas, drained and rinsed
- 1 small red onion, finely diced
- 2 cups baby spinach, roughly chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground turmeric
- ½ tsp ground cinnamon
- ½ tsp smoked paprika
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
- Olive oil, for cooking
- Salt and pepper, to taste
Herbed Yogurt (optional but recommended):
- ½ cup plain yogurt
- 1 tbsp lemon juice
- 1 tbsp fresh dill, finely chopped
- Pinch of salt
Method
1. Roast the Sweet Potatoes
- Preheat oven to 200°C.
- Slice sweet potatoes in half lengthwise.
- Lightly score the flesh and drizzle with olive oil.
- Season with salt and pepper.
- Roast for 30–40 minutes, until soft.
2. Prepare the Filling
- Heat olive oil in a pan over medium heat.
- Sauté onion until softened.
- Add garlic and cook briefly until fragrant.
- Stir in chickpeas and cook for a few minutes.
- Add cumin, turmeric, cinnamon, and smoked paprika, stirring well.
- Toss in spinach and cook until wilted.
- Finish with fresh parsley and mint.
3. Create the Boats
- Once sweet potatoes are cooked, gently press the centres to open them up.
- Spoon the chickpea mixture into each half.
4. Add the Sauce
- Mix yogurt, lemon juice, dill, and salt.
- Spoon or drizzle over the filled sweet potatoes.
To Serve
Serve warm with extra herbs or a sprinkle of chilli flakes if you like a bit of heat. A handful of toasted seeds or nuts on top adds great texture.
