Roasted Cauliflower Steaks with Lemon‑Herb Dressing
These hearty steaks pair the nutty flavor of roasted cauliflower with a zesty, herb‑infused dressing that’s both light and protein‑rich.
- 1 head cauliflower, cut into ½‑inch thick steaks
- 2 tbsp extra‑virgin olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp salt
- ⅛ tsp black pepper
- ½ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- 2 tbsp fresh tarragon, chopped (or 1 tbsp dried)
- 2 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1 tbsp honey or maple syrup (optional)
- Salt and pepper to taste
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
