Roasted Cauliflower Steak with Lemon‑Herb Dressing
Ingredients:
- 1 large head cauliflower, cut into 1‑inch thick slices
- 2 tablespoons extra‑virgin olive oil
- Salt and pepper, to taste
- 1/2 teaspoon smoked paprika (optional)
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 tablespoon capers (optional)
- 1 tablespoon chopped sunflower seeds (optional)
Instructions:
- Preheat oven to 425°F (220°C). Place cauliflower slices on a sheet pan lined with parchment paper.
- Brush each slice with 1 tablespoon olive oil and sprinkle salt, pepper, and smoked paprika.
- Roast 20–25 minutes, flipping halfway, until golden and tender.
- While roast, whisk together lemon zest, lemon juice, Dijon mustard, minced garlic, capers, and a splash of olive oil to create the dressing.
- When cauliflower is done, drizzle the lemon‑herb dressing over the slices.
- Sprinkle chopped parsley
