Roasted Cabbage with Lemony Dijon Drizzle

A crispy, caramelised cabbage dish finished with a bright, tangy dressing and a crunchy, savoury topping.
Ingredients
For the Cabbage
- 1 small cabbage, cut into 6 wedges
- 1–2 tbsp olive oil
- Salt & black pepper, to taste
- ¾ cup vegetable broth
Crunchy Topping
- 2 tbsp olive oil
- 3 tbsp capers
- 3 garlic cloves, thinly sliced
- ⅓ cup slivered almonds
- 3 tbsp fresh dill, chopped
- ½ tbsp lemon zest
- Pinch of salt
Lemony Dijon Dressing
- 1 tbsp honey (reduced)
- 2 tbsp olive oil
- 3 tbsp Dijon mustard
- 1–2 tbsp lemon juice (boosted for extra zing)
- 2 tsp fresh dill, finely chopped
- ¼ tsp garlic powder
- Pinch of salt
Method
1. Roast the Cabbage
Preheat oven to 220°C (425°F).
Heat a large oven-safe pan over medium-high heat with olive oil. Sear cabbage wedges cut-side down until deeply golden (about 2–3 minutes per side).
Season, then pour in vegetable broth. Cover and transfer to the oven. Roast for 15–20 minutes, then uncover and cook another 5–10 minutes until tender and lightly crisped.
2. Make the Crunchy Topping
While the cabbage cooks, heat olive oil in a small pan.
Add capers, garlic, and almonds. Cook for about 2 minutes, stirring, until golden (not burnt).
Transfer to a paper towel to drain, then toss with dill, lemon zest, and a pinch of salt.
3. Mix the Dressing
In a small jar or bowl, whisk together all dressing ingredients until smooth and slightly thickened.
4. Assemble
Place roasted cabbage on a serving plate.
Spoon over the lemony Dijon dressing, then finish with the crunchy topping.
Notes
- Extra lemon juice gives this a sharper, fresher flavour—adjust to taste.
- No mayo keeps it lighter and more vibrant.
- Works well warm or at room temperature.
