Quinoa Lentil Salad

Quinoa Lentil Salad
- 1 cup quinoa
- 1 cup green lentils, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- salt and pepper to taste
- Rinse quinoa and lentils under cold water. In a saucepan, combine quinoa, lentils, and water or broth. Bring to a boil, reduce heat, cover, and simmer for 20 minutes until liquid is absorbed. Remove from heat and let sit, covered, for 5 minutes.
- Fluff the quinoa and lentils with a fork, then transfer to a large bowl to cool slightly.
- Add tomatoes, cucumber, red onion, and parsley to the quinoa mixture.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour dressing over salad, toss gently to combine.
- Serve warm, at room temperature, or chilled.
