It's a perfect plant-forward meal that comes together quickly, making it ideal for a healthy weeknight dinner.
Ingredients
- For the Green Curry Paste:
- 1 hot green chili (adjust to your heat preference; remove seeds for less spice)
- 2 cloves garlic
- 1/2 inch fresh ginger, peeled
- 3/4 cup packed fresh cilantro with stems
- 2 tsp fresh lime juice
- Zest of 1 lime
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp garam masala (optional, for extra depth)
- 1/2 tsp sea salt
- 1 cup full-fat coconut milk
- 1 small kaffir lime leaf (optional, for authentic aroma)
- 1 lemongrass leaf (optional, for bright citrus notes)
- For the Stir-Fry:
- 2 tsp extra virgin olive oil
- 1 tsp pure maple syrup
- 7 oz extra-firm tofu, pressed thoroughly and cubed
- 2 green onions, white parts separated from green parts (keep green parts for garnish)
- 1 red bell pepper, thinly sliced
- 1/2-1 cup assorted vegetables of choice (e.g., sliced mushrooms, broccoli florets, baby eggplant, snap peas, zucchini, or spinach)
- Pick Your Base (choose one):
- 6 oz rice noodles or linguini, cooked according to package directions
- 2 cups cooked black & brown rice mix
- 1-1 1/2 cups cooked quinoa
- For Garnish:
- Pinch of red pepper flakes (optional, for extra heat)
- Freshly ground black pepper
- Reserved green parts of green onions, thinly sliced
- Fresh lime wedges
Instructions
- Prepare the Green Curry Paste: Combine all green curry paste ingredients in a high-speed blender or food processor. Blend until completely smooth and a vibrant green color. Set aside.
- Cook Your Base: Prepare your chosen base (rice noodles, rice, or quinoa) according to package instructions. Drain well if needed and set aside.
- Stir-Fry the Tofu & Veggies: Heat a large skillet or wok over medium-high heat. Add olive oil and maple syrup. Once shimmering, add the pressed and cubed tofu. Cook, stirring occasionally, until golden brown and slightly crispy on all sides. Push the tofu to one side of the skillet. Add the white parts of the green onions, red bell pepper, and your chosen assorted vegetables. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Add the Curry: Create a space in the center of the skillet by pushing the tofu and vegetables to the edges. Pour the prepared green curry paste into the center. Let it heat for 30-60 seconds until fragrant, then stir everything
