Pineapple and Cucumber Salad
Ingredients
- 1 fresh pineapple, diced (about 2 cups)
- 1 English cucumber, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh lime juice
- 1 tsp honey (optional)
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions
- Rinse the pineapple and cucumber under cold water. Dice pineapple into bite‑sized cubes.
- Place pineapple cubes, cucumber slices, and mint in a large bowl.
- In a small bowl whisk together olive oil, lime juice, honey (if using), salt, and pepper until well blended.
- Drizzle the dressing over the fruit and vegetables. Gently toss to coat.
- Let the salad sit for 5 minutes to allow flavors to meld, then stir again before serving.
- Serve chilled or at room temperature. Garnish with additional mint if desired.
