Lemon Bliss Truffles
A citrusy, non‑baked treat that’s perfect for a quick sweet bite without the sugar crash.
Ingredients
- 1 cup unsweetened almond butter
- 1/4 cup raw honey or maple syrup
- 2 tbsp lemon zest
- 1 tbsp fresh lemon juice
- 1/2 cup rolled oats
- 1/4 cup shredded coconut, toasted
- Pinch of sea salt
- Optional: edible flowers or matcha powder for dusting
Instructions
- In a medium bowl, combine almond butter, honey, lemon zest, and lemon juice. Mix until well blended.
- Fold in rolled oats, toasted coconut, and sea salt. The mixture should be thick enough to hold its shape when rolled.
- Using a tablespoon, scoop out portions and roll them between your hands to form 1.5 inch balls.
- Place the truffles on a parchment‑lined tray and chill for at least 20 minutes to set.
