Herby Green Sauté

Ingredients (Serves 3-4)
- 1 tbsp olive oil
- 2 shallots, thinly sliced
- 3 garlic cloves, minced
- 1 cup mushrooms, sliced
- 1 small zucchini, sliced into half-moons
- 1 cup broccoli florets
- ½ cup green beans, trimmed and halved
- ½ cup frozen peas
- 2 cups fresh spinach
- 2 tbsp fresh herbs (such as parsley, basil, dill or thyme), chopped
- Salt and black pepper, to taste
- Lemon zest or juice (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shallots and sauté for 2-3 minutes until soft and translucent. Add garlic and cook for 30 seconds until fragrant.
- Add mushrooms and cook for 5-6 minutes until browned and tender.
- Add zucchini, broccoli and green beans. Sauté for 6-8 minutes, stirring occasionally, until vegetables are tender-crisp.
- Add peas and cook for 2-3 minutes until heated through.
- Stir in spinach and cook until just wilted.
- Remove from heat and stir in fresh herbs. Season with salt, pepper, and a squeeze of lemon juice or a sprinkle of lemon zest if desired.
