Hearty Butter Bean & Vegetable Soup with Gluten-Free Pasta and Feta

A nourishing, veggie-packed soup with creamy butter beans, wholesome gluten-free pasta, and tangy feta. This hearty and flavorful dish is naturally gluten-free and perfect for a comforting meal that supports a healthy lifestyle.
Ingredients (4 Servings)
- 2 tbsp olive oil
- 2 shallots, finely chopped
- 3 garlic cloves, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 1 tsp dried oregano
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes (optional, for a hint of heat)
- 1 (700g) jar passata (tomato puree)
- 4 cups vegetable broth (or water)
- 1 (400g) can butter beans, drained and rinsed
- 1 cup small gluten-free pasta (gnocchetti, ditali or small shells work well)
- 1 cup broccoli florets, small
- 1 cup cauliflower florets, small
- Salt and black pepper, to taste
- Fresh herbs (parsley, basil or thyme), chopped, for garnish
- 100g feta cheese, crumbled, for topping
Instructions
- Heat olive oil in a large pot over medium heat. Add shallots and cook for 3-4 minutes until soft. Add garlic, celery, and carrots. Sauté for another 5 minutes, stirring occasionally.
- Stir in oregano, smoked paprika, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Add passata and vegetable broth. Bring the mixture to a gentle simmer.
- Add the drained and rinsed butter beans and gluten-free pasta. Cook for 8-10 minutes, or according to pasta package directions, until pasta is al dente.
- Add broccoli and cauliflower florets. Simmer for another 8-10 minutes, until the vegetables are tender-crisp.
- Season the soup generously with salt and black pepper to taste.
- Ladle the hot soup into bowls. Top with crumbled feta cheese and a sprinkle of fresh chopped herbs. Drizzle with a little extra virgin olive oil if you like.

To boost the nutrient profile even further, consider swapping in seasonal greens like spinach or kale at the end of cooking. For an extra creamy texture without adding dairy, mash some of the butter beans before adding them to the soup, allowing them to thicken the broth naturally.
