Healthy & Delicious Tortilla Wraps
Warm up the ingredients and gather your favorite fillings.
- 4 whole‑grain tortillas (10 inch)
- 1 cup cooked quinoa
- 1 cup fresh spinach, chopped
- 1 medium carrot, shredded
- 1/2 cup chopped bell pepper
- 1/4 cup sliced cucumber
- 1/4 cup hummus (or Greek yogurt)
- 1 avocado, sliced
- 2 tbsp feta cheese, crumbled (optional)
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- Salt & pepper, to taste
- Heat the tortillas: Place each tortilla in a dry skillet over medium heat for 20s per side, or microwave on high for 30s.
- Spread 1 tbsp hummus evenly over each tortilla.
- Layer spinach, quinoa, carrot, bell pepper, cucumber, and avocado.
- Sprinkle feta and cilantro over the fillings.
- Squeeze lime juice, season with salt and pepper.
- Fold the sides in, then roll tightly from the bottom up.
- Optional: Slice in half and serve immediately or place on a plate wrapped in parchment for a quick lunch on the go.
Tip: Adding a pinch of cayenne or smoked paprika to the hummus can elevate the flavor while keeping the wraps low in calories.
