Healthy Date and Walnut Cake
Ingredients:
- 1 cup chopped dates (pitted)
- 1 cup toasted, chopped walnuts
- 1 cup whole wheat flour (or oat flour)
- ½ cup almond flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsweetened applesauce
- ¾ cup unsweetened almond milk (or any plant milk)
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 2 tbsp coconut oil, melted
- Optional: pinch of cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
- In a large bowl, whisk together the flours, baking powder, baking soda, and salt.
- In another bowl, combine the dates, applesauce, almond milk, honey, vanilla, melted coconut oil, and cinnamon if using.
- Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the toasted walnuts.
- Pour batter into the prepared pan and smooth the top with a spatula.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice, serve, and enjoy a wholesome treat!
