Healthy Crunchy Chocolate Bars
These bars are packed with protein, fiber, and healthy fats, plus the natural sweetness of dates and cocoa. They’re perfect for an on‑the‑go snack or post‑workout boost.
Ingredients
- 1 cup rolled oats (gluten‑free if desired)
- ½ cup raw unsalted almonds
- ½ cup raw sunflower seeds
- ¼ cup unsweetened shredded coconut
- 1 cup Medjool dates, pitted
- ¼ cup natural almond butter
- ¼ cup dark chocolate chips (70% cacao)
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Line an 8‑inch square pan with parchment paper.
- In a food processor pulse the oats, almonds, sunflower seeds, and coconut until coarse.
- Add the dates, almond butter, melted coconut oil, vanilla, and sea salt. Pulse until the mixture sticks together when pressed.
- Transfer the mixture to the prepared pan and press firmly, smoothing the top.
- Drop the chocolate chips evenly over the surface, then lightly press them in.
- Refrigerate for 30 minutes to set. Once firm, lift out with parchment and cut into bars.
- Store in an airtight container in the fridge for up to 7 days, or freeze for longer.
