Healthy Corn Fritters
These golden fritters blend the natural sweetness of corn with wholesome grains and herbs for a nutritious, protein‑rich snack that's quick to make.
Ingredients
- 1 cup sweet corn kernels (fresh or frozen, thawed)
- 1/2 cup whole wheat flour
- 1/4 cup oat flour (or ground flaxseed)
- 1 cup unsweetened almond milk (or oat milk)
- 1 egg (or 1 Tbsp ground flaxseed + 3 Tbsp water)
- 1 Tbsp fresh cilantro, chopped
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 1 tsp sea salt
- 1/2 tsp black pepper
- 2 Tbsp olive oil for cooking (or avocado oil)
Instructions
- In a medium bowl whisk together the flours, salt, pepper, cumin, paprika, and cayenne.
- In another bowl beat the egg (or stir the flax‑egg mixture) and whisk in the milk.
- Pour the wet mixture over the dry ingredients and stir until just combined—too much folding can make the fritters tough.
- Fold in the corn kernels and cilantro.
