Prep: 40mCook: 11mPosted: 7/9/2026

Ingredients (makes 18-20 cookies)
- 1 cup almond flour
- 1 cup all-purpose flour (for a gluten-friendly option, see health tip)
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp sea salt
- 1/3 cup ghee, melted or softened
- 2-3 Tbsp maple syrup
- 1/4 cup brown sugar (optional, adjust to taste)
- 1 egg
- 1 tsp vanilla extract
- 1 cup dark chocolate chips or chopped chocolate
Instructions
- Preheat your oven to 175°C (350°F). Line a baking tray with parchment paper.
- In a medium bowl, whisk together the almond flour, all-purpose flour, baking soda, baking powder, and sea salt until well combined.
- In a separate large bowl, mix the melted/softened ghee, maple syrup, and brown sugar (if using) until smooth and creamy.
- Add the egg and vanilla extract to the wet ingredients, mixing until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the dark chocolate chips or chopped chocolate.
- Chill the cookie dough in the refrigerator for 20-30 minutes. This helps prevent spreading and enhances chewiness.
- Using a spoon or cookie scoop, portion the dough into balls and place them onto the prepared baking tray, leaving some space between each cookie.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.
- Let the cookies cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely.
Chef's Notes & Lifestyle Medicine Tip
These cookies offer a delightful balance of flavor and nutrition. Using ghee instead of traditional butter provides healthy fats and a rich, nutty depth, while maple syrup offers natural sweetness with beneficial antioxidants. For those seeking a gluten-friendly alternative, you can replace both the almond flour and all-purpose flour with 1 1/2 cups sunflower seed flour and 1/4 cup tapioca starch. Opt for dark chocolate with a high cocoa content (70% or more) to boost antioxidants and reduce added sugars. Remember, mindful indulgence is key to a balanced lifestyle!
