Health-Conscious Blackberry Slice
Description: A light and nutritious slice featuring fresh blackberries topped with a wholesome almond‑oat crumble, baked to golden perfection.
- 3 cups fresh blackberries
- 1 cup rolled oats
- ½ cup almond flour
- ⅓ cup honey or maple syrup
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- Pinch of sea salt
- 2 tbsp coconut oil, melted
- 1 tbsp chia seeds
- 1 tbsp ground flaxseed
- 2 tbsp chopped raw almonds
- 8‑x‑8 inch parchment‑lined baking pan
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the rolled oats, almond flour, chia seeds, ground flaxseed, cinnamon, nutmeg and sea salt.
- Stir in the melted coconut oil and honey (or maple syrup) until a crumbly, moist mixture forms.
- Press the crumb mixture firmly into the bottom of the parchment‑lined pan.
- Evenly spread the fresh blackberries over the crumb base.
- Bake in the preheated oven for 20 minutes, or until the crumb edges turn golden brown.
- Remove from the oven and allow to cool for 5 minutes before slicing.
- Serve warm or at room temperature, optionally drizzled with a tiny splash of extra honey or a sprinkle of fresh mint leaves.
