Ginger Turmeric Noodles Soup

Ingredients
- 200g whole grain noodles
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
- 4 cups vegetable broth
- 1 cup carrots, julienned
- 1 cup spinach or kale, chopped
- 2 green onions, sliced
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, grated ginger, and turmeric. Sauté for another 2-3 minutes until fragrant.
- Pour in the vegetable broth and bring it to a boil.
- Add the whole grain noodles and carrots. Cook according to the package instructions until the noodles are tender.
- Stir in the chopped spinach or kale and cook for an additional 2-3 minutes until wilted.
- Season with salt, pepper, and lime juice to taste.
