Double Chocolate Date Balls
No‑bake, protein‑rich treats that pack a chocolate punch while keeping sugar naturally low.
Ingredients
- 2 cups pitted Medjool dates
- 1 cup raw almonds
- ¼ cup raw cacao powder
- ¼ cup unsweetened cocoa powder
- 2 Tbsp coconut oil
- 1 tsp vanilla extract
- Pinch of sea salt
- Optional: 1 Tbsp shredded coconut for rolling
Instructions
- Pulse the almonds in a food processor until fine, like flour.
- Add dates, cacao, cocoa, coconut oil, vanilla, and salt. Pulse until the mixture is sticky and pulls apart when pressed.
- Using a melon baller or your hands, form 1‑½‑inch balls. If desired, roll each ball in shredded coconut.
- Place on parchment paper and refrigerate for at least 30 minutes to set.
- Enjoy chilled, or store in an airtight container in the fridge for up to a week.
