Creamy Roasted Broccolini, Cauliflower & Mushroom Skillet
A comforting, creamy vegetable dinner with Mediterranean flavours, using your dried tomatoes and a little feta for a salty finish.
Ingredients
- 1 bunch broccolini, cut into pieces
- ½ cauliflower, cut into small florets
- 250 g mushrooms, sliced
- 6–8 dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 small shallot or onion, diced
- 2 tbsp olive oil
- ¾ cup vegetable stock
- ¾ cup cashews, soaked in hot water for 20 minutes and drained
- Juice of ½ lemon
- 1 tsp Dijon mustard
- ½ tsp smoked paprika
- ½ tsp ground cumin
- ¼ tsp turmeric
- ½ tsp dried oregano
- Salt and pepper to taste
- 50–75 g feta, crumbled
- Fresh parsley or basil to serve
Cashew Cream
Blend until silky smooth:
- Soaked cashews
- Vegetable stock
- Lemon juice
- Dijon mustard
- Pinch salt
Method
- Roast the cauliflower at 200°C for 20–25 minutes with 1 tablespoon olive oil, paprika, cumin, turmeric, salt and pepper.
- While roasting, heat remaining olive oil in a large skillet. Sauté onion and garlic for 2–3 minutes.
- Add mushrooms and cook until golden and most of their moisture has evaporated.
- Stir in broccolini and dried tomatoes. Cook for 3–4 minutes.
- Pour in the cashew cream and oregano. Simmer gently for 5 minutes until thick and creamy.
- Fold through the roasted cauliflower.
- Taste and adjust seasoning with extra lemon, salt and pepper if needed.
- Scatter over feta and fresh herbs before serving.
Optional Add-Ins
- White beans or cannellini beans for extra protein.
- Toasted pumpkin seeds or pine nuts for crunch.
- A pinch of chilli flakes if you like a little heat.
- Serve over quinoa, brown rice, or gluten-free pasta.
The roasted cauliflower becomes slightly sweet, the dried tomatoes add bursts of flavour, and the cashew cream makes it rich without needing dairy.
