Creamy Pink Oyster Mushroom, Pea & Parmesan Pasta

A Wholesome and Delicious Pasta Dish
This creamy, savoury pasta features the earthy notes of golden pink oyster mushrooms, the sweetness of peas, and the rich tang of Parmesan, all finished with bright lemon zest and freshly cracked black pepper. A truly comforting and nutritious meal!
Ingredients
- 200 g small pasta of choice (gnocchetti, ditalini, stelline, anellini, risoni or similar)
- 225 g pink oyster mushrooms, coarsely chopped
- 2 cloves garlic, minced
- Β½ cup onion, finely chopped
- 1 heaped tablespoon buckwheat flour, or other thickening flour such as brown rice flour
- 2 cups milk of choice (dairy, oat, almond, soy or other preferred milk)
- ΒΌ cup white wine
- Β½ cup grated Parmesan cheese, plus extra for serving
- 1 cup frozen peas
- 1 tablespoon ghee
- 1 tablespoon extra virgin olive oil
- Zest of 1 lemon
- Sea salt and freshly cracked black pepper, to taste
Instructions
- Cook the pasta: Bring a large saucepan of salted water to the boil. Cook the pasta according to packet directions until al dente. Reserve Β½ cup of the cooking water before draining.
- Brown the mushrooms: Heat the ghee and olive oil in a large frying pan over medium-high heat. Add the pink oyster mushrooms and cook for 5β7 minutes until golden and lightly caramelised. Season with a little salt and pepper, then transfer to a plate.
- SautΓ© the aromatics: In the same pan, add the onion and cook for 3β4 minutes until softened. Stir in the garlic and cook for a further minute.
- Add the flour: Sprinkle over the buckwheat flour (or brown rice flour) and stir continuously for about 1 minute.
- Build the sauce: Gradually pour in the milk of choice and white wine, whisking well to create a smooth sauce. Simmer gently for 4β5 minutes until slightly thickened.
- Add cheese and peas: Stir in the Parmesan and frozen peas. Cook for another 2β3 minutes until the peas are tender and the cheese has melted into the sauce.
- Combine: Return the mushrooms to the pan and add the cooked pasta. Toss everything together, adding a splash of the reserved pasta water if needed to loosen the sauce.
- Serve: Divide between bowls and finish with lemon zest, extra grated Parmesan and a generous grind of black pepper.
