Creamy Lemon Cannellini Bean & Broccoli Bowl

Ingredients
- 1 can cannellini beans, drained and rinsed
- 1 small head broccoli, chopped into florets
- 1 cup sugar plum tomatoes, halved
- 2–3 tablespoons quark cottage cheese or goat’s yoghurt
- ½ lemon (juice + a little zest if you like)
- Handful fresh herbs (parsley, basil, dill, chives or mint — whatever you have), chopped
- Salt and pepper to taste
- Optional: olive oil, garlic, chilli flakes
Method
Bring a small pot of water to the boil or use a steamer. Cook the broccoli for about 3–4 minutes, just until bright green and tender-crisp. Drain and set aside.
Meanwhile, place the cannellini beans in a frypan over medium heat. Add a squeeze of lemon juice, salt, pepper, and a tiny splash of water (or olive oil if you have some). Let them warm through for 2–3 minutes.
Add the halved sugar plum tomatoes and cook for another 2 minutes, just until they soften slightly and begin to burst.
Stir through most of the fresh herbs and gently fold in the broccoli.
Spoon into a bowl and top with a generous dollop of quark cottage cheese for a mild creamy finish, or goat’s yoghurt if you want a tangier Mediterranean flavour.
Finish with extra herbs, lemon zest and cracked pepper.
Why this works
The warm creamy beans make it comforting, broccoli adds bite, the tomatoes become sweet and juicy, and the lemon plus herbs keep everything fresh and bright. The quark or goat’s yoghurt turns it into a silky sauce without needing cream.
Optional twist: lightly mash a few of the beans in the pan to create a creamier, more satisfying texture.
