Creamy Cashew Potato Gratin

Ingredients
- 2 lbs (900 g) Yukon Gold or Russet potatoes
- 1½ cups raw cashews, soaked in hot water for 30 minutes, then drained
- 1 cup (240 ml) water
- 2 tbsp lemon juice
- 2 tbsp nutritional yeast
- 2 garlic cloves
- 1 tsp salt (for cashew cream)
- ½ tsp onion powder
- ¼ tsp nutmeg
- ½ tsp salt, divided (for potatoes)
- ½ tsp black pepper
- 2 tbsp olive oil
- 1 tbsp fresh thyme leaves (or 1 tsp dried)
- Optional: pinch of chili flakes
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Make the cashew cream: In a high-speed blender, combine the drained soaked cashews, water, lemon juice, nutritional yeast, garlic, 1 tsp salt, onion powder, and nutmeg. Blend until completely smooth and creamy. Set aside.
- Peel potatoes (optional, but recommended for a smoother texture) and slice them thinly, about 1/8-inch (3 mm) thick, using a mandoline or sharp knife.
- In a large bowl, toss the potato slices with the remaining ½ tsp salt, black pepper, olive oil, and fresh or dried thyme until evenly coated. Add a pinch of chili flakes if using.
- Arrange the seasoned potatoes in the prepared baking dish in overlapping layers. Pour the cashew cream evenly over the top, gently shaking the dish to ensure it seeps between the layers.
- Cover the baking dish tightly with aluminum foil and bake for 35 minutes.
