Coconut Thai-Style Lentils with Vegetables in nut sauce

Creamy Nut Sauce
- 4 tbsp (or more) your favourite nut butter (almond, cashew, peanut, Brazil nut, or a mix)
- 2-inch piece fresh ginger, roughly chopped or 1 tsp ginger powder
- 2 cloves garlic
- 1 tbsp soy sauce (or coconut aminos for soy-free)
- 1–2 tsp lime juice
- Zest of ½ lime
- 1 small kaffir lime leaf, very finely chopped
- 2 tbsp chopped fresh cilantro
- ¼ tsp tamarind concentrate (optional)
- 2 tsp sriracha
- 2 tsp sweet chilli sauce
- ¼ tsp cayenne pepper (optional)
- ¼ tsp salt
- 1 tbsp maple syrup (adjust to taste)
- ½ tsp sesame oil
- 1 cup coconut milk
Method:
Blend everything until smooth and creamy. Taste and adjust—more lime for freshness, maple for sweetness, or chilli for heat. Set aside.
Lentils
- 1 can lentils, drained and rinsed
Vegetables
- 2 tsp oil
- ⅓ cup sliced onion (red or white)
- ½ cup thinly sliced red bell pepper
- ¼ cup sliced carrots
- ½ zucchini, thinly sliced
- 1 cup broccoli florets
Instructions
- Heat oil in a large pan over medium-high heat. Add onion and cook until softened and slightly golden (3–4 minutes).
- Add bell pepper, carrots, zucchini, and broccoli. Cook for another 3–4 minutes until just tender but still vibrant.
- Pour in the prepared nut sauce and stir to coat the vegetables evenly.
- Add the lentils and mix gently.
- Reduce heat to medium and simmer for a few minutes until everything is warmed through and the sauce thickens slightly.
- Taste and adjust seasoning if needed. Serve warm.
