Coconut Lime Chia Pudding Slices

- 1/4 cup fresh lime juice
- 1/4 cup maple syrup (or honey)
- 1/2 cup chia seeds
- Pinch of sea salt
- In a medium bowl, whisk coconut milk, lime zest, lime juice, maple syrup, and sea salt until well combined.
- Stir in the chia seeds, ensuring they are fully dispersed.
- Cover the bowl and refrigerate for at least 4 hours, or overnight, until the mixture thickens to a pudding consistency.
- Divide the pudding into 4 equal portions.
- Place each portion on a plate or bowl and slice the top like a fruit cake to expose the silky layers.
