Chickpea and Date Energy Balls
These protein‑packed, naturally sweetened energy balls are perfect for a post‑workout boost or a mid‑afternoon snack. They combine the heart‑healthy benefits of chickpeas, the antioxidant power of dates, and a dash of spices for flavor.
- 1 cup cooked chickpeas (or canned, drained and rinsed)
- 1 cup Medjool dates, pitted
- 1/4 cup raw almonds
- 2 tbsp ground flaxseed (optional for omega‑3)
- 2 tsp almond butter
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup rolled oats
- 1 tbsp chia seeds (optional)
- Place chickpeas, dates, almonds, flaxseed, almond butter, cinnamon, sea salt, oats, and chia seeds in a high‑speed blender. Pulse until the mixture is finely ground and starts to clump.
