Carrot Cake Oats
A hearty, sweet treat that packs the nutrition of oats, carrots, and wholesome spices.
Ingredients
- 3 cups rolled oats
- 2 cups grated carrots
- 1 cup unsweetened applesauce
- 1/2 cup almond milk (or any plant milk)
- 1/4 cup honey or maple syrup
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/2 tsp baking powder
- Pinch of salt
- Optional: 1/4 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the oats, cinnamon, ginger, nutmeg, baking powder, and salt.
- In a separate bowl, combine grated carrots, applesauce, almond milk, honey, and vanilla. Mix until well blended.
- Pour the wet mixture into the dry ingredients and stir until everything is combined. Fold in nuts if using.
- Drop spoonfuls of the batter onto the prepared baking sheet, flattening slightly to form rounds.
- Bake for 18–22 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
- Let the oat cakes cool on a rack before enjoying.
Health Tip: Using rolled oats and carrots keeps the dish high in fiber and beta‑carotene, while substituting honey with maple syrup or using agave can reduce the glycaemic load. Add a scoop of protein powder for a post‑workout boost.
