Creamy green pea pasta

Ingredients
- 45 ml olive oil
- 1 small red or yellow onion, finely chopped
- 6 garlic cloves, peeled and minced
- 2.5 ml paprika
- 5 ml Italian seasonings
- 300 g frozen peas, thawed
- 350 g silken tofu
- 1 cup (packed) fresh basil leaves
- 500 ml pasta cooking water (reserved from cooking)
- 1 tsp salt
- 1/2 tsp black pepper
- 350 g gnocchetti pasta (or any pasta you love, use gluten-free for a GF option)
- 1/2 tsp red pepper flakes (optional, for a hint of spice)
- 2 tbsp nutritional yeast (optional, for a cheesy flavour boost)
Instructions
- Cook the Pasta: Bring a large pot of salted water to the boil. Cook your chosen pasta according to package instructions until al dente. Before draining, reserve 500 ml of the starchy pasta water. Then, drain the pasta.
- Sauté the Aromatics: In the same pot you cooked the pasta (or a separate large skillet), heat the olive oil over medium-high heat. Add the finely chopped onion and minced garlic. Sauté for 3-5 minutes until the onion is softened and just starting to turn golden.
- Infuse Flavors: Stir in the paprika and Italian seasonings. Cook for another 10 seconds, allowing the spices to become fragrant.
- Add the Peas: Incorporate the thawed frozen peas into the pot. Stir and cook for about 5 minutes, stirring regularly to prevent them from sticking or burning. If needed, add a small splash of the reserved pasta water to keep things from drying out.
- Blend the Creamy Sauce: Carefully transfer the sautéed onion, garlic, and peas to a high-speed blender. Add the silken tofu, fresh basil leaves, nutritional yeast (if using), salt, black pepper, and 250 ml of the reserved pasta water. Blend on high for 2-3 minutes, or until the sauce is completely smooth, silky, and creamy. Taste the sauce and adjust salt and pepper if necessary. If it's too thick, blend for another minute with a splash more pasta water.
- Combine and Finish: Pour the luscious green pea sauce back into the pot with the cooked pasta. Stir well to coat all the pasta evenly. If the sauce is too thick, gradually add more of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency. Adjust any final seasonings to taste.
- Serve: Divide the creamy green pea pasta among serving bowls. Garnish with optional red pepper flakes and a few fresh basil leaves. Enjoy this nutrient-dense and flavourful meal!
